Tuna and Avocado Salad Recipe

Instead of the usual mayonnaise in your tuna salad, try this recipe that uses mashed avocado instead.

Ingredients:

  • 425g of Tuna in Brine (drained)
  • 30g of Red Capsicum finely chopped
  • 20g of Cucumber finely chopped
  • 5g of fresh Coriander finely chopped
  • 1 Avocado (medium-sized), mashed
  • 2 tsp of Lemon Juice

How to Prepare:

Drain water from tuna, then transfer to a bowl and flake with a fork. Add diced vegetables, avocado and lemon juice and mix with a fork until well combined.

Spoon equal amounts back into avocado shells, garnish with fresh coriander and serve.
